Nóinín's Sweet Potato Soup 


I should really call this Sweet Potato & Chicken soup, as I use leftover chicken carcass to make the stock (tastes so much better than powder).

You will need:

1 leftover cooked chicken carcass
1 large onion (quartered)
2 sticks of celery (chopped into one inch pieces)
6 sweet potatoes (chopped into cube sized pieces)
salt & pepper
Yoghurt to garnish


Method:
  1. Place the chicken carcass into a large pot, along with the onion and the celery. Season WELL with salt & pepper.
  2. Top with water (just enough to cover the carcass), bring to the boil, and allow to simmer for 2 1/2 hours.
  3. Remove the carcass, and any remaining chicken bones.(Leave any meat pieces in - they will add flavour)
  4. Add the cubed sweet potato, bring to boil, and simmer for 25 mins or until tender. 
  5. Blitz in a food blender or with a hand blender, serve. Garnish with a swirl of yoghurt.
